Yesterday I was really craving a wrap, but obviously with the challenge that Adam and I have going (who can get to their ideal weight the fastest” I couldn’t splurge.  Well, I could, but I honestly didn’t want to, and I honestly wanted to find something that would satisfy my wrap craving without making me feel guilty afterwards.  Boy did I find the PERFECT answer for the primal/paleo wrap – Seaweed!!

That’s right!  You can buy seaweed sheets – the ones that you would use to roll your own sushi – and they make a great tortilla alternative.  To be honest, while I ate mine it just reminded me of spinach (maybe slightly stronger).  It was delicious. Unfortunately we didn’t really have any meat on hand, but we did have some bacon left over from our half pig purchase last fall.  So, I had a bacon, mixed greens, radish, and green onion wrap and it was delicious!  It was awesome because everything except the seaweed wrap itself came from Indiana – the veggies came from the Farmer Amos CSA!!  I’m very excited to have found something that I can have that satisfies that guilty pleasure of a wrap when I’m not exactly in the mood for a salad! :)

Tonight’s dinner was awesome, if I do say so myself…and it was also a Katulak original!  I got wild-caught, fresh cod and “breaded” it myself.  The “breading” was a primal – not paleo – style.  For 1 lb. of cod I used 1/4 cup of almond flour, 1/8 cup of parmesan cheese, and 1/4 tbsp. of oregano (Italian seasoning would be just as delicious)!  I used an egg wash, and then “breaded” the fish fillets with the above mixture.  In a large skillet I heated about a tablespoon of coconut oil – make sure the skillet is hot before adding the fish so that you sear it instead of steam it!  I cooked the fish for approximately two minutes a side, and it was delicious! :)  It was a really quick dinner, too!  Perfect for if you’re busy – even if you have an anxious newborn on your hands! :)  I didn’t take a picture, because we ate it too quickly, but wanted to pass along the recipe since it was so good! :)
