So, tonight’s dinner was SO incredibly amazing that I had to post about it tonight, it just couldn’t wait!  What did we have, you ask?  Burgers (grass-fed, of course) topped with feta cheese and cherry salsa along with sweet potato fries and sautéed cabbage with mushrooms and onions.  YUM!

Here is the link to the recipe for the cherry salsa (see the bottom of my post).  Once we got a system down for pitting the cherries, it was very simple to make, AND we used our first jalapeno from our garden! :)  We mixed in “All Season” into our ground beef because we’ve gotten kind of snobby about our burgers and can’t just have plain ground beef at this point, too bland.  I just cannot say enough about this salsa, it was amazing!  I think it would be a great appetizer as well if you put it on top of sweet potato chips or cucumber slices.

The sweet potato fries were coated with coconut oil and seasoned with salt, pepper, cayenne pepper, chili powder, paprika, cinnamon, and garlic powder and baked for approximately 40-45 minutes at 350.

The cabbage, mushrooms, and onions were sautéed/steamed in butter and beef stock.  I seasoned the veggies with salt, pepper, and crushed red pepper.  Delicious!
