This has been one productive and delicious week. 🙂 Spring is truly in the air at the Katulak house in Carmel…our yard had it’s first mow of the season, all the weeds have been dug up, we purcharsed “starters” of the four herbs that we use most frequently to keep in planters in the backyard, and of course the glorious meals (and dessert)! 🙂
Adam made us a fantastic meal of Ham Steak with Apple and Rosemary Dijon Sauce. The link to the recipe is below, and this was by far my favorite way that we have eaten our ham steaks from Paul. For those of you that don’t know, we purchase our meat in bulk from a local farm (but that’s another post for another day). I, of course, have to name each purchase. Our first pig was Paul, who is almost out of the freezer, and our second pig is Pete. 🙂 Anyway, here is the link to the recipe that Adam used: http://www.primaleats.com/recipes/ham-steaks-with-apple-and-rosemary-dijon-sauce. The only thing he did differently was he used dry, white vermouth instead of the white wine (because we didn’t have any in the house…GO RED!!).
You can’t really see a lot of the ham because they are covered by glorious apples and onions (which go amazingly well together) – but the side dish we made was cauliflower mash, our new-found-fave side dish. Here is the link to that recipe: http://www.eatingwell.com/recipes/creamy_mashed_cauliflower.html. You really don’t miss potatoes with options like this!
The next primal awesomeness we had this week was the Italian Primal Pot Roast (I know, it’s getting out of roast season, but we needed a quick/easy meal since we had commitments Thursday night)! While I can’t give the recipe because we got it from the Primal Blueprint Cookbook, I can share the amazing pictures. The recipe doesn’t really call for a lot of veggies, but we threw a lot in – button mushrooms, carrots, celery, fire-roasted tomotoes, onions, and garlic – to add more substance. Let me know if you’re interested in trying our variation! 🙂
YUM! I’ll leave the dessert that Mean Jeanne and I made for another day… 🙂 That’ll keep ya comin’ back 🙂
