Friday evening was spent cooking dinner, enjoying some beverages with my man, and testing out what will be my birthday cake for next weekend.  This is it…AMAZING!  We were not disappointed.  Adam found this recipe for a carrot cake and it sounded so good I said that I wanted him to make it for my birthday cake.  So, we decided to test it out this weekend (because who wants to be disappointed by their own birthday cake?!)!  We cut the recipe below in third and instead of making a cake, we made cookies with the cream cheese frosting and chopped walnuts on top.  They were so good they didn’t make it past Friday night! 🙂  Here is the link to the carrot cake recipe (which we WILL be making for my birthday this coming Saturday):  http://www.primal-palate.com/2011/04/carrot-cake.html.
